How to Cook the Perfect Steak: A Step-by-Step Guide

  • 1 steak (preferably ribeye or striploin)
  • Salt

  • Cast iron skillet or grill pan
  • Tongs
  • Instant-read thermometer

Step 1: Take the steak out of the fridge at least 30 minutes before cooking. This allows the steak to come to room temperature and ensures that it cooks evenly.

Step 2: Season the steak generously with salt and pepper on both sides. Don’t be afraid to use a lot of salt, as it helps to bring out the flavor of the meat.

Step 3: Preheat your cast iron skillet or grill pan over high heat for at least 5 minutes. You want the pan to be extremely hot before adding the steak.

Step 5: Carefully place the steak in the pan using tongs. Let it cook for 3-4 minutes on one side without moving it. This will create a nice crust on the steak.

Step 6: Flip the steak over using the tongs and let it cook for another 3-4 minutes on the other side.

Step 7: Check the temperature of the steak using an instant-read thermometer. For medium-rare, the temperature should read 130-135°F (54-57°C); for medium, the temperature should read 140-145°F (60-63°C).

Step 8: Remove the steak from the pan and let it rest for 5-10 minutes. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.

Step 9: If desired, add a tablespoon of butter to the pan and swirl it around until it’s melted and foamy. This creates a delicious sauce that you can drizzle over the steak before serving.

Step 10: Serve the steak with your favorite sides, such as roasted vegetables or mashed potatoes.
